A Roman Inspired Chicken

Whole roasted chicken with honey and spices served with einkorn berry salad.


This is a wonderful recipe that utilizes a mixture of spices and an acidic honey glaze to flavor a roasted chicken. I say it's Roman inspired because I got the idea while reading about the dining habits in ancient Rome. People from the upper class would show off their status by a) cooking meat and b) flaunting their collection of exotic spices from around the world.


Nowadays, you don't need to be from the upper crust to enjoy this meal. Einkorn is an ancient relative of wheat and makes a very delicious cooked grain. The texture is incredibly unique and it's full of vitamins and nutrients.




Spice Blend:

T=tablespoon t=teaspoon

  • 1.5 T whole coriander

  • 1 t whole juniper berries

  • 1 t whole cumin seed

  • .5 t whole black peppercorn

  • .25 t whole clove

  • .25 t whole caraway seed

  • 2 cardamom pods (use only the seeds from inside the pod, discard the husk)

  • 1 stick of cinnamon broken up in to smaller pieces

(toast/grind/sift) then add:

  • 6-7 microplane strokes of nutmeg

  • .5 t turmeric powder

  • .25 t ground ginger

  • 2 T Extra Virgin Olive Oil

Honey Glaze:

  • 1/3 Cup of Honey

  • 1/4 Cup Apple Cider Vinegar

  • 6 whole dates sliced

Einkorn Berry Salad:

  • 1.5 Cups Einkorn Berry Cooked in 5 cups of water

  • zest of 2 lemons

  • 3 T of Extra Virgin Olive Oil

  • Fresh Mint and Salt to taste
